There are tons of recipes on the net for these things, but i freehand it. Mine goes a little something like this.
mix the almond meal and shredded coconut with a pinch of ground nutmeg, cinnamon and 2 packets of splenda blend with 1.5-2.5 tbs of melted butter. you want it slightly damp not wet, it should just start clumping. Then divide evenly among all the cupcakes, it will be about 1.5 tbs of the crust mixture into each cupcake, tamp is with a spoon so its firm in the bottom. Bake on 350 for ~15 minutes until it turns golden brown, usually when you first smell the almonds it’s about done.
its easier if you let the cream cheese get to room temp first but if you don’t it just means more mixing.
combine cream cheese, lemon or lime juice, eggs, vanilla, and splenda to taste in a mixing bowl. mix the shit out of it. best if you use an electric mixer. you don’t want a single lump. mix till its completely smooth, the ripples coming off the beaters should be only a few millimeters wide, this is what makes the texture so nice.
make sure you taste it and adjust the sweetness
I like the ease of use of using Lucky Leaf canned low sugar pie fillings, they are made with splenda so not too bad. If you want you can dice some fresh strawberries and cook them down them in a saucepan with a little water and splenda to make your own strawberry sauce.
after the crusts have cooled a little. spoon the cheese mixture into each cupcake, It wont rise to much so you can get it close to the top. Spoon some topping on top of each.
Bake at 350 for ~20-25 minutes, they will rise a little, maybe even brown(if there isn’t any topping)
if you forego the topping its 4-5 carbs per cupcake. the topping usually adds 3-4 that’s whats included in the figures below.
